My daughter Becky does my grocery shopping for me each week. Last week I had noodles on the list and she surprised me with a different "kluski" noodles because she said they looked like the noodles my mom used to make and share with her. My mom made noodles with farm fresh eggs, flour and water and kneaded the dough with her strong arms and hands. She rolled the dough into large circles, so thin we could read the newspaper through them! She cut very narrow strips and then cut the noodles into shape and allowed them to dry before storing them in empty coffee cans.
Today I made some GOOD noodle soup with those kluski noodles. Becky brought me a freshly baked rotisserie chicken at noon. I cut it up and added it to two cans of chicken broth. I even added all the skin and boney pieces, including the drumstick bones,wing ends, etc. I added two and a half cups of dry KLUSKI noodles and an extra can of water. I seasoned this with salt and pepper plus Mrs. Dash seasoning, a few peppercorns, a little thyme, and half an onion. I cooked it 15 minutes. I found that I had to add another can of water as the noodles really expanded. But it was so delicious. This pot of soup will give me two more meals after my big dinner today.
The skin gave the soup a little darker color, but did not affect the taste. Those narrow KLUSKI enriched egg noodles were just perfect for this soup. They tasted better than those wider noodles. That little chicken is nearly all used up already, as I also put some white breast meat in with the soup. I'm glad I made my own soup today....it sure tasted good!
